Load ibm-granite/granite-speech-5.0-2b-ONNX instead of the 4.1-2b ONNX build.
Bump Transformers.js 4.2.0 -> 4.3.2: 4.2.0 always loads the non-WebGPU
onnxruntime build in Safari ("webgpuInit is not a function"), so the
model never loaded there.
Use the 5.0 model card's transcription prompt, and add Italian and
Mandarin translation targets.
